Triple Cheese Sourdough Grilled Cheese (Print Version)

Rich, melty sandwich with three cheeses between golden, crispy sourdough slices. Ultimate comfort classic, ready in 20 minutes.

# What You'll Need:

→ Bread & Cheese

01 - 4 slices thick sourdough bread
02 - 2 slices sharp cheddar cheese
03 - 2 slices provolone cheese
04 - 1/2 cup shredded mozzarella cheese

→ Spreads & Fats

05 - 2 tablespoons unsalted butter, softened
06 - 1 tablespoon mayonnaise, optional

# How to Prepare:

01 - Lay out sourdough slices and spread butter evenly on one side of each slice. If using mayonnaise, spread a thin layer on the opposite side for enhanced crispiness.
02 - Place two buttered slices on a clean surface with buttered side down. Layer each with one slice cheddar, one slice provolone, and half the shredded mozzarella. Top with remaining bread slices, buttered side up.
03 - Heat a large skillet or griddle over medium-low heat until evenly warmed.
04 - Place sandwiches in the pan and cook for 3 to 5 minutes, pressing gently, until bread is golden brown.
05 - Flip sandwiches carefully to avoid cheese spillage. Cook for another 3 to 5 minutes until the remaining side is golden brown and cheese is fully melted.
06 - Transfer to a cutting board and rest for 1 minute. Cut diagonally and serve immediately while hot.

# Expert Advice:

01 -
  • The way cheddar, provolone, and mozzarella create layers of flavor ranging from sharp to creamy is something special
  • That sourdough crust gets impossibly crispy while staying soft inside, exactly how grilled cheese should be
  • Ready in twenty minutes but tastes like something from a diner that has been perfecting sandwiches for decades
02 -
  • Medium low heat is not a suggestion, it is the difference between perfectly melted cheese and burnt bread with cold centers
  • The mayonnaise trick sounded weird to me too but it creates a restaurant quality crust that butter alone cannot achieve
03 -
  • Grate your own mozzarella instead of buying pre shredded, it melts so much better
  • Use a spatula to press down gently while cooking to help the cheese layers meld together completely
